Should schools with STEM in their name be listed as "STEM School" or "Science, Technology, Engineering and Mathematics School"?

We generally prefer that abbreviations and acronyms be spelled out, but in this case, spelling out all of those words would make the name ridiculously long. And since STEM is a commonly used acronym used in official school names, it is acceptable to include the acronym "STEM" in the name.
