Two large cemeteries (total internments 55K+) across the street from each other have been bought by a cemetery management company and merged under a new name as one cemetery. The map still shows both cemeteries by their old names as separate entities. Should I delete the two older listings and enter a "new" cemetery with the map indicator sited between the two?

In this case, it's probably best to retain the two points (especially if they're separated by a road, or are some distance from each other) and just update their names to reflect the new name.
